Ingredients:
- 6 hard-boiled eggs
- 1.5 tablespoons Christmas Curry Cheer Blend
- 1 large onion, finely chopped
- 1/4 ginger, grated
- 4 garlic cloves, finely chopped
- 3/4 cup tomato sauce or 1 small can diced tomato
- 1/2 cup plain yogurt
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh parsley for garnish
Instructions:
- In a pan, heat vegetable oil and sauté the chopped onion until it's soft and translucent. Add ginger, garlic, and (optional) green chili.
- Add the Merry Masala Blend and cook for a minute to release the aroma.
- Stir in the tomato puree and cook until the oil starts to separate.
- Add yogurt and mix well.
- Gently add the hard-boiled eggs to the curry.
- Let the curry simmer for about 10 minutes.
Season with salt to taste and garnish with fresh parsley. Serve with rice or naan.
