Ingredients:
- 3-4 cups mixed vegetables
- 2 tablespoons Merry Masala Blend
- 1 onion, finely chopped
- 1/4 inch grated ginger
- 5 cloves garlic, minced
- Optional: 1-2pcs green chili, sliced in half
- 1/2 cup tomato sauce or 4 small tomatoes chopped
- 1/2 cup coconut milk or 1/2 cup soaked and crushed cashews
- 2 tablespoons oil
- Salt to taste
- Chopped cilantro for garnish
Instructions:
- Heat the oil in a pan and sauté whole spices for about a minute (1 cinnamon, 3-4 cardamom, 3 cloves, 6-10 curry leaves, 1 bay leaf).
- Add the chopped onion until it becomes translucent then add garlic, ginger, and (optional) chili.
- Add the Merry Masala Blend and cook for a minute until fragrant.
- Add the mixed vegetables and sauté for a few minutes.
- Pour in the tomato sauce and coconut milk. Stir well and bring to a gentle simmer.
- Cover and cook for about 15-20 minutes, or until the vegetables are tender.
Season with salt to taste and garnish with chopped cilantro. Serve with rice or naan.
